No-bake oat and seed bars
Oat, seed and peanut butter bars with dark chocolate, set in the fridge without baking.
Ingredients
- 1 cup (200 ml) rolled oats
- 2 tbsp (30 ml) chia seeds
- 2 tbsp (30 ml) flaxseeds
- 2 tbsp (30 ml) sesame seeds
- 3 tbsp (45 ml) chopped dark chocolate
- 2 tbsp (30 ml) peanut butter
- 2 tbsp (30 ml) coconut oil
- 1 tbsp (15 ml) honey
Method
- Toast the oats, flaxseeds and sesame seeds in a dry frying pan over a medium heat for 4-5 minutes, stirring constantly, until fragrant and lightly coloured. Tip them into a large bowl and add the chia seeds.
- Warm the coconut oil, peanut butter and honey in a small pan over a low heat until melted. Take it off the heat, add the chopped chocolate and stir for 1-2 minutes until it melts.
- Pour the warm mixture over the dry ingredients and stir until everything is evenly coated. Leave for 5 minutes so the chia seeds absorb some of the liquid.
- Press the mixture firmly into a dish of about 15 x 20 cm lined with baking paper, using the back of a spoon or damp hands to level it.
- Chill in the fridge for at least 2 hours, until completely firm.
- Lift it out using the paper and cut into 8 bars with a sharp knife.
Note: Coconut oil softens at room temperature, so keep the bars in a covered container in the fridge.
From Chef Fatma's notebook. Where the notebook listed only the ingredients, we wrote out the method for a home kitchen. Measures: 1 cup = 200 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml. Oven temperatures are for a conventional oven without a fan. If you have an allergy, please read the ingredients carefully.
